Mayonnaise is a condiment made from oil, egg yolks, and vinegar. It’s popular, but its cultural appeal pales in comparison to the likes of ketchup and mustard.
Mayonnaise normally makes its way onto sandwiches and into non–green salads, such as tuna salad and potato salad. It has a slight gelatinous quality which makes it easily spreadable. Overall, mayonnaise tastes fair, but is more aptly used as a mixture for more decadent sauces (tartar, Thousand Island).
